Ta partia powstała dzięki technikom pozbiorczym opracowanym we współpracy między Los Nogales, gdzie kawa była uprawiana i przetwarzana, a Cata Export, która opracowała tę metodę – partnerstwu skoncentrowanemu na podnoszeniu jakości.

Proces rozpoczyna się od 72-godzinnego utleniania w wiśni, co pozwala na kontrolowaną ekspozycję na tlen i wczesny rozwój smaku. Następnie wiśnie są pozbawiane skórki, pozostawiając nienaruszoną warstwę śluzu, i szczelnie zamykane w zbiornikach na 36-godzinną fermentację beztlenową, która pogłębia istniejący profil smakowy. Lekkie mycie usuwa część (ale nie całość) śluzu przed suszeniem, zatrzymując fermentację.

Efektem jest wykwintna filiżanka o bogatych, dżemowych nutach.
