Ce lot est transformé selon une méthode semi-lavée (honey), où la cerise de café est dépulpée, mais une couche de mucilage collant est intentionnellement laissée sur le parchemin pendant le séchage.

Après la récolte, les cerises sont mises au repos intactes pendant 24 heures, permettant aux sucres naturels de se développer avant le dépulpage. La rétention de ce mucilage renforce encore la douceur naturelle de ce lot. Le séchage s'effectue dans le séchoir solaire de Benancio, où des conditions contrôlées donnent une tasse délicieusement sucrée et soyeuse.
