Les méthodes de post-récolte appliquées aux lots qui composent ce café sont des techniques à faible consommation de ressources et à fort impact, reproductibles par de nombreux producteurs travaillant dans des environnements variés.

Une fois récolté, le Cata Pacamara a été fermenté en cerise (les grains encore enveloppés dans leur mucilage) pendant près de cinq jours. Le mucilage a ensuite été retiré des grains avant une autre fermentation de 24 heures et un dernier lavage pour terminer le processus.

Le résultat est une tasse douce et riche. Attendez-vous à des saveurs de fondant, de rhum épicé et de mandarine. Un café conçu pour un double usage : une expérience délicieuse infusé en filtre et en espresso.
