Bourbon N39 ist eine tansanische Bourbon-Varietät, die erstmals in den 1930er Jahren für Qualität und Ertrag gezüchtet wurde.

Diese Charge durchlief eine verlängerte Fermentation bei hohen Temperaturen. Die Kirschen wurden sechs Tage lang in einer kontrollierten, exothermen Umgebung gehalten, in der erhöhte Temperaturen die Entwicklung komplexer, fruchtiger Ester förderten und gleichzeitig die natürliche Süße und Struktur der Sorte verstärkten. Nach der Fermentation wurden die Kirschen entpulpt, wobei eine bestimmte Menge an Mucilage intakt blieb.

Das Ergebnis ist eine samtige, weiche Tasse mit Steinobstsüße und einer leichten Nussigkeit.
