A secagem lenta num desumidificador durante aproximadamente 9 dias, seguida de um curto período de repouso em silos de madeira, preserva a doçura do café, ao mesmo tempo que oferece ricos sabores de chocolate, fruta de caroço madura e uma chávena luxuosamente encorpada.
