Colombia’s reputatie voor innovatieve verwerkingsmethoden en de levendige smaken die ze kunnen versterken, blijft groeien, en deze koffie is ons nieuwste voorbeeld waarom.

Technisch gezien een gewassen koffie, onderging deze partij een uitgebreid verwerkingsproces:

1 - 16 uur oxidatie van de kers (blootstelling aan zuurstof - vergelijkbaar met een natural- of honey-proces)

2 - 38 uur anaerobe (zuurstofloze) fermentatie in afgesloten tanks

3 - 12 uur oxidatie van boon en vruchtvlees (blootstelling aan zuurstof voor meer complexiteit en zoetheid)

4 - 24 uur fermentatie met koffiemosto (vergelijkbaar met mosto in de wijnbereiding)

5 - Een thermische shockwas (eerst heet water, daarna koud).

Het doel van het opnieuw introduceren van mosto is om het smaakprofiel te verrijken met extra complexiteit, meer funky fruittonen en stroperige texturen. Het resultaat is een kop met tonen van zoete bakkruiden, gestoofd fruit en een zachte, boterachtige mondgevoel. Phwoar.
