Kolumbie — Finca Los Nogales x Cata

Tato šarže je výsledkem posklizňových technik vyvinutých ve spolupráci mezi farmou Los Nogales, kde byla káva pěstována a zpracována, a společností Cata Export, která techniku vyvinula – partnerství zaměřené na posouvání kvality vpřed.

Proces začíná 72hodinovou oxidací v třešni, která umožňuje řízené působení kyslíku pro rozvoj chuti. Třešně jsou poté zbaveny dužiny, přičemž sliz zůstává neporušený a je uzavřen v tancích pro 36hodinovou anaerobní fermentaci, která dále rozvíjí stávající chuť. Následuje lehké promytí, které odstraní část (ale ne všechen) slizu před sušením, čímž se fermentace zastaví.

Výsledkem je dekadentní šálek s bohatými, džemovými tóny.
